Once you've made your Chinese Roast Chicken, do not throw away the carcass! Carcass will now become your new favourite thing. Because once you realise that you can actually make the most hearty and satisfying bone-broth in house, it is a total game changer. Bone broth has innumerable amounts of benefits, the main one being increasing immunity. And that is a hugely important thing, especially when you have little ones in the house. There are lots of different ways to make bone-broth, mine is pretty simple and straight forward. Disclaimer: you don't always need to make a roast chicken to make bone broth at home, most butchers sell organic bones just for this purpose. For the broth you will need:one carcassfiltered water one onion2 bay leaves2 garlic cloves1 tsp turmeric (optional - I add it in for an added immunity boost)Method:1. Place the carcass into a large pot, and cover it with filtered water, enough to cover the whole carcass (so approx. 3/4 full). 2. Add in the bay leaves, garlic coves, a roughly chopped onion and turmeric. Boil on slow fire for 6-10 hours. We usually boil for 10 hours, closing the fire at night and re-boiling the next day for another 10 hours, this allows all the juices to come out.You will have to keep topping up the filtered watered, as it will reduce down. Just top it up a little if you do plan on boiling it for an extended time.For the Ramen you will need:approx. 2 1/2 cups of shredded roast chicken from your Chinese Roast Chicken 2 cloves minced garlic1/4 white onion minced1/2 Thai red chilli sliced (go for a thicker chilli as they are not so spicy)1 packet tender stem broccolinoodles of your choice2-3 tbsps. soy sauce2 tbsps. sesame seed oil1 tbsp. chili oil Method:1. Heat around 4-5 cups of bone broth in one large pan, keep on low fire2. Add in your garlic, onion, chili and broccoli. Let boil for 5-6 minutes3. Add in your Chinese Roast Chicken, stir well4. Add in your soy sauce, sesame seed oil and chili oil (increase/decrease based on personal preference and taste)5. Add in your noodles and let cook6. Once the noodles are cooked, take off the fire and serve in ramen bowls. Sprinkle with some garnish (optional) such as chopped spring onion and sesame seedsIf you would like a creamier ramen, add in 1 tbsp. of sesame tahini paste into your broth. It will need a little bit more seasoning to make up for the added paste.
